I'm really into pulled meat at the moment, it's easy, you can leave it all day and then go back to it and serve with something quick that creates a delicious meal. I've been meaning to try making my own BBQ pulled pork for ages and never got around to it but today, I took the plunge and decided to try it as I had loads of things to do today so a quick and easy dinner was definitely on the cards. It took about 15 minutes to prepare and then was left to cook for about 4 and a half hours. It's really tasty and great served with some fresh crusty bread rolls and chips, maybe a salad if you're feeling colourful
(You should eat salad, it's good for you and tastes good - but not as good as this pulled pork!)
You will need
3/4 pint of tomato ketchup
3/4 pint of water
1/4 pint lemon juice
1 tablespoon of BBQ Sauce
3 bay leaves
1 teaspoon of smoked sea salt
1/4 teaspoon of cinnamon
1 teaspoon of paprika
1/4 teaspoon ground cumin
2 tablespoons of worcestershire sauce
1 teaspoon chilli powder
1 tablespoon of brown sugar
1 1/2 grated onions
2 cloves of crushed garlic
5ml Jack Daniels Tennessee Honey
1.4 kg boneless pork shoulder
Method
Add all of the ingredients into a large pan and bring to the boil, turn the heat down low and put the lid on, leave it for 4 hours. Turn off the heat and remove the fat from the pork and shred the meat with a fork. Once shredded, put the meat back into the pan of sauce and continue to cook on a low heat for a further 30 minutes.
It's delicious on it's own with chips or rice, it can be used as a filling in potato skins, you can use it on pizza, with pasta or just in a sandwich. Whichever way you choose, this is truly delicious and so easy to make both on the hob and in the slow cooker.
