Seriously Good Foodie Fun - Chicken Masala with Rice

It has been a while since my last Foodie Fun post, I have been gathering recipes and I have got some amazing recipes and fun time saving kitchen stuff coming up in the not too distant future! So when I was recently approached by Seriously Good, (a project created by Gordon Ramsay after his trip to Tanzania with Comic Relief) to review their cooking sauces I was more than happy to oblige!  Gordon created and developed this exclusive range of cooking sauces in 2009 and he does not receive a penny from the sales. Seriously Good also promise that at least 10p per jar goes to Comic Relief.  As Comic Relief is a really good cause and most people do not realise just how far it all extends beyond Red Nose Day, plus the fact that Gordon Ramsay is in my top 3 celebrity TV chefs it would have been rude not and if it helps get them a little more publicity so they can raise a little more money then that is even better!  Seriously Good sauces have both an Indian range of flavours and an Italian range too.  This evening I cooked with the Aromatic Masala Sauce from the Indian Range.

I decided not to use one of the recipe suggestions sent to me and just follow the simple directions on the label.  Super easy! 
  • Chop some chicken into pieces
  • stir fry in the pan for 5 mins
  • add the sauce and simmer for 20 mins until chicken is cooked
  • Serve with rice and a naan bread
  • DONE!

The sauce was seriously delicious and there is no wonder it was good because Gordon himself selects all of the ingredients to ensure they are high quality and that they taste authentic.  Bursting with flavour and was a proper good curry.  The sauce would have worked well with other meats, or just vegetables.  The tomato and coriander totally complimented each other and the sauce was not too hot.  It was just a very clever blend of herbs and spices.  The end result is delicious!  I will be buying the sauce for sure. It was really simple to make and would be great with other things added in, or as a marinade for Summer BBQ meats.  Naughty of me to admit but it would be great on chips too!  Alternatively, here is another great recipe you can easily make using the Seriously Good Aromatic Masala Sauce.  It requires a little more effort than the label on the jar but it's still super simple!

Masala Biryani

1 jar Seriously Good Aromatic Masala sauce
500g chicken thigh fillets, each sliced into three
200g basmati rice
250g baby spinach leaves, rinsed
            2 tbsp olive oil
1 onion, thinly sliced
25g toasted flaked almonds
10g coriander, chopped



Serves 4
 Prep time: 10 minutes

Cooking time: 35 minutes

  1. Preheat the oven to 190°C/170°C fan/gas mark 5.
  2. Heat a large non-stick frying pan and brown the chicken pieces for 3-4 minutes on each side, until golden. Remove and set aside.
  3.  Place the rice in a large baking dish along with the chicken and the Seriously Good Aromatic Masala sauce. Fill the empty sauce jar with boiling water and pour over the top. Mix well, cover in foil and place in the oven for 20 minutes.
  4. Stir the spinach into the rice and cover again. Cook for 15-20 minutes, until the rice is tender.
  5. Meanwhile, heat the oil in a frying pan, add the onion and cook, stirring for 15-20 minutes, until golden and crispy.
  6. Serve the rice with the almonds, coriander and onion sprinkled over the top.
Tip: Eager to boost your vegetable intake? Try adding 150g frozen peas when you stir in the spinach.

I've seen this on the store shelves ... have been wondering whether or not to try it out! Gordon is also in my list of top 3 chefs. thanks for the post ... I'm hungry now :)

i've not tried this one but tried one of the pasta sauces and it was lovely!
